- 1 zucchini, sliced
- 1 cup cherry tomatoes
- Fresh parsley and feta cheese for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, mix olive oil, oregano, garlic powder, paprika, salt, and pepper.
- Rub the seasoning mixture over the chicken breasts.
- Arrange chicken on a baking sheet and surround with sliced vegetables and lemon slices.
- Bake for 25-30 minutes until chicken is cooked through and vegetables are roasted.
- Garnish with fresh parsley and feta, then serve hot.
