- 1 lb beef stew meat, cubed
- 1 can kidney beans, drained
- 1 can corn kernels
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 ribs celery, sliced
- 4 cups beef broth
- 1 can diced tomatoes
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat. Add beef cubes and brown on all sides.
- Add onion, garlic, carrots, and celery. Sauté until softened.
- Pour in beef broth and diced tomatoes. Bring to a boil.
- Add beans, corn, paprika, cumin, salt, and pepper. Reduce heat to low.
- Simmer uncovered for 45 minutes, stirring occasionally.
Notes
Enhance flavor by adding a dash of hot sauce or smoked paprika for extra depth. Serve with crusty bread for a complete meal.
