- 8 oz cooked penne pasta
- 1 cup grilled or charred corn kernels
- 1 cup cherry tomatoes, halved
- 1/4 cup chopped fresh cilantro
- 1/4 cup mayonnaise
- 2 tbsp lime juice
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions, drain and set aside.
- In a large bowl, mix mayonnaise, lime juice, chili powder, cumin, salt, and pepper to make the dressing.
- Add the cooked pasta, grilled corn, cherry tomatoes, and cilantro into the bowl.
- Toss everything until well coated.
- Serve chilled or at room temperature, garnished with extra cilantro if desired.
Notes
- For added spice, sprinkle with cayenne pepper.
- Use fresh or frozen corn that has been grilled or roasted for authentic flavor.
- This salad can be prepared a few hours in advance; stir before serving.
