- 2 large chicken breasts, sliced into strips
- 3 bell peppers, sliced (red, yellow, green)
- 1 large onion, sliced
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, mix chili powder, paprika, cumin, garlic powder, onion powder, salt, and pepper.
- In a large bowl, toss chicken strips and sliced peppers/onions with olive oil and spice mixture.
- Spread evenly on a sheet pan lined with parchment paper.
- Bake for 20-25 minutes until chicken is cooked and vegetables are tender.
- Garnish with chopped cilantro before serving.
Notes
- You can adjust the spice level by adding cayenne pepper.
- Serve with warm tortillas, salsa, or sour cream for extra flavor.
