Ingredients

  • 1 lb boneless, skinless chicken breasts, sliced
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 1 bell pepper, sliced
  • 2 garlic cloves, minced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season chicken with Cajun seasoning.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add chicken and cook until browned, about 5 minutes.
  4. Remove chicken and set aside.
  5. In the same skillet, sauté onion and bell pepper until soft.
  6. Add garlic and cook for 1 minute.
  7. Stir in orzo pasta and cook for 2 minutes.
  8. Pour in chicken broth, bring to a boil, then reduce heat and simmer until orzo is cooked and liquid is absorbed, about 10 minutes.
  9. Return chicken to skillet, mix well, and heat through.
  10. Garnish with parsley and serve hot.
