Ingredients

- 1 lb boneless, skinless chicken breasts, sliced
- 1 tablespoon Cajun seasoning
- 2 tablespoons olive oil
- 1 small onion, diced
- 1 bell pepper, sliced
- 2 garlic cloves, minced
- 1 cup orzo pasta
- 2 cups chicken broth
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season chicken with Cajun seasoning.
- Heat olive oil in a large skillet over medium heat.
- Add chicken and cook until browned, about 5 minutes.
- Remove chicken and set aside.
- In the same skillet, sauté onion and bell pepper until soft.
- Add garlic and cook for 1 minute.
- Stir in orzo pasta and cook for 2 minutes.
- Pour in chicken broth, bring to a boil, then reduce heat and simmer until orzo is cooked and liquid is absorbed, about 10 minutes.
- Return chicken to skillet, mix well, and heat through.
- Garnish with parsley and serve hot.
Notes
- You can add sliced smoked sausage for extra flavor.
- Adjust Cajun seasoning for more or less spice.
- Serve with a side of green salad for a complete meal.
