- For the crumble topping:
1/2 cup all-purpose flour
1/4 cup brown sugar
1/4 teaspoon cinnamon
4 tablespoons unsalted butter, cold and cubed
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Mix flour, baking powder, and salt in a bowl. Cut in cold butter until crumbly. Add sugar, egg, and vanilla, mixing until combined. Chill dough for 30 minutes.
- Prepare the crumble topping by combining flour, brown sugar, cinnamon, and butter until crumbly.
- Drop spoonfuls of dough onto prepared baking sheets. Sprinkle crumble topping generously over each cookie.
- Bake for 12-15 minutes, until edges are golden. Cool on wire racks.
